- Prep: peel and devein shrimp 180 g and pat dry; mix taco seasoning as needed with chili flakes ½ tsp into a Mexican spice blend. Mince garlic 2 cloves.
- Bring a large pot of water to a rolling boil over high heat; add sea salt 1/3 tsp. Cook penne 180 g 1 minute less than package time until al dente; drain and reserve about ½ cup pasta cooking water.
- Heat olive oil 1 Tbsp in a skillet over medium-high heat; lay shrimp in a single layer, sprinkle taco spice blend, and sear about 1 minute per side until pink, curled, and lightly charred with spice aroma; set aside.
- Lower heat; sauté minced garlic until fragrant, about 20 seconds.
- Add cream sauce as needed and 3–4 Tbsp pasta water; stir over low heat until lightly simmering and smooth with a creamy aroma.
- Raise heat to high; add penne and seared shrimp; toss vigorously 1–2 minutes until cream sauce coats the tube centers.
- Plate in a deep dish; sprinkle black pepper and a little chili flakes; serve hot to match Second Floor Cafe fiesta shrimp penne.
