- Prep 丹麥麵包 2份, 酪梨 1顆, 香腸 140公克, 水波蛋 2顆; toast bread 350°F 3–5 min until crisp outside, soft inside.
- Cook main protein over medium heat; poach or fry eggs separately.
- Stack 橄欖油 1大匙, 海鹽 1/3小匙, 黑胡椒碎 1/4小匙, 辣椒粉 1/2小匙, protein, egg, and greens on bread; keep height for open sandwich.
- Finish with pepper, lemon, or balsamic; serve while bread is crisp.
