  1. Pat 240 g salmon dry on both sides; salt lightly and rest 3 minutes; cut 150 g broccoli into small florets; mince 2 garlic cloves.
  2. Heat 1 Tbsp olive oil in a skillet over medium-high; place salmon skin-side down without moving; sear 3–4 minutes until the skin is golden.
  3. Flip and sear 2 minutes until about medium; transfer salmon out.
  4. In the same pan over medium, cook garlic 30 seconds until fragrant—do not let it burn.
  5. Add broccoli; stir-fry over high heat 2–3 minutes until bright green with stems slightly tender but still crisp.
  6. Return salmon; drizzle 1 tsp soy sauce along the pan edge; reduce over medium 1 minute, spooning sauce over the fish.
  7. Taste and serve—the center should be opaque and flake easily with a fork.
