- Slice the beef thinly against the grain. Cut tofu into cubes and pat dry. Shred the onion; mince the garlic.
- Pan-fry the tofu until lightly golden on both sides; set aside.
- In the same pan, stir-fry the beef and garlic over high heat until the beef is mostly colored (about 70–80% done), then remove the beef. Sauté the onion until soft.
- Return the tofu and beef, add soy sauce, sugar, and water, cover, and braise on low 12–15 minutes until the sauce thickens slightly.
