How to make it

  1. Slice the beef thinly against the grain. Cut tofu into cubes and pat dry. Shred the onion; mince the garlic.
  2. Pan-fry the tofu until lightly golden on both sides; set aside.
  3. In the same pan, stir-fry the beef and garlic over high heat until the beef is mostly colored (about 70–80% done), then remove the beef. Sauté the onion until soft.
  4. Return the tofu and beef, add soy sauce, sugar, and water, cover, and braise on low 12–15 minutes until the sauce thickens slightly.

Make it easier

  • Keep the heat low and nudge tofu from the edge of the pan so it does not break.
  • Taste before adding salt—soy sauce may be enough.

Refrigerate and eat within 1 day; reheat gently and splash in a little water.
