How to make it

  1. Cut 120 g beef into strips against the grain and pat dry. Cut 200 g broccoli into small florets and rinse. Mince 2 garlic cloves. In a small bowl, mix 1 Tbsp soy sauce and 1 tsp oyster sauce.
  2. Bring a pot of water to a boil. Blanch the broccoli 1 minute until bright green, then drain immediately.
  3. Heat a skillet over medium-high with 1 Tbsp oil. When hot, stir-fry the beef until the surface changes color and the meat is about 70% done, 1–2 minutes. Transfer promptly to a plate.
  4. In the same pan, add a little more oil if needed and sauté the garlic about 20 seconds.
  5. Add the blanched broccoli and beef back to the pan. Pour in the sauce.
  6. Toss over high heat 30 seconds until evenly coated and the beef is fully cooked. Taste and adjust seasoning, then serve.
