- Cut 120 g beef into strips against the grain and pat dry. Cut 200 g broccoli into small florets and rinse. Mince 2 garlic cloves. In a small bowl, mix 1 Tbsp soy sauce and 1 tsp oyster sauce.
- Bring a pot of water to a boil. Blanch the broccoli 1 minute until bright green, then drain immediately.
- Heat a skillet over medium-high with 1 Tbsp oil. When hot, stir-fry the beef until the surface changes color and the meat is about 70% done, 1–2 minutes. Transfer promptly to a plate.
- In the same pan, add a little more oil if needed and sauté the garlic about 20 seconds.
- Add the blanched broccoli and beef back to the pan. Pour in the sauce.
- Toss over high heat 30 seconds until evenly coated and the beef is fully cooked. Taste and adjust seasoning, then serve.
