- Shred the cabbage coarsely; smash the garlic. Beat the eggs with a pinch of salt and 1 tsp water until slightly frothy (the water helps fluffy, tender curds); set aside.
- Heat oil in a skillet; stir-fry garlic, then cabbage until slightly softened.
- Push the cabbage to the side, pour in the eggs and scramble into chunks, then toss with the cabbage and season.
