How to make it

  1. Prep: Potatoes 2; pat protein dry and rub with Olive oil 2Tbsp, Salt pinch, Black pepper pinch, Paprika 1tsp, Garlic powder 1/2tsp, Cayenne pepper 1/4tsp.

  3. Peel potatoes and cut into thick sticks; soak in cold water 15 minutes, drain, and pat completely dry.
  4. Fry at about 170°C in batches 4 minutes until pale gold; drain.
  5. Raise oil to about 190°C and fry again 1–2 minutes until crisp; drain well.

Tips & storage

Make it easier

  • Air fry at 200°C about 18 minutes, flip and spray oil, to cut down on deep frying.

Best eaten fresh; leftovers soften overnight.
