- Prep: Potatoes 2; pat protein dry and rub with Olive oil 2Tbsp, Salt pinch, Black pepper pinch, Paprika 1tsp, Garlic powder 1/2tsp, Cayenne pepper 1/4tsp.

- Peel potatoes and cut into thick sticks; soak in cold water 15 minutes, drain, and pat completely dry.
- Fry at about 170°C in batches 4 minutes until pale gold; drain.
- Raise oil to about 190°C and fry again 1–2 minutes until crisp; drain well.
