  1. Rinse okra (150 g) under running water; trim stems only—keep whole pods intact. Pat each piece dry one by one, including fuzz and surface moisture.
  2. Mince garlic (3 cloves); mix with olive oil (1 tbsp), a pinch of salt, and black pepper into a garlic oil.
  3. Toss okra thoroughly with the garlic oil so each pod gets a thin coat; rest 2 minutes to absorb flavor.
  4. Preheat air fryer to 190°C for 3 minutes.
  5. Arrange okra in the basket in one layer with space between pods—do not stack.
  6. Air-fry at 190°C for 5 minutes; open, flip, then air-fry 4 minutes more until lightly charred on the surface.
  7. Pierce a stem with chopsticks—it should be slightly tender inside while still pleasantly slippery. Sprinkle a little more black pepper if desired and serve hot.
