  1. Dice beef small; peel onion and slice thin along the grain; dice carrot; rice in a bowl.
  2. Oil in skillet; cook onion over medium-low until translucent; add curry powder; stir 30 seconds until fragrant.
  3. Raise heat; stir-fry beef until mostly colored (about 70–80% done); set aside so it does not overcook; return pan with carrot and water.
  4. Cover; simmer low 10–12 minutes until slightly thick; taste and salt; ladle over rice.
