- Slice 150 g beef against the grain into thin pieces. Marinate with 1 tsp soy sauce, 1 tbsp rice wine, and 1 tsp cornstarch for 10 minutes; julienne 1/4 onion. Spoon 1 bowl cooked rice into a large bowl to keep warm.
- In a small bowl, mix 2 tbsp oyster sauce with 2 tbsp water to make the sauce.
- Heat a skillet over medium-high. Add 1 tbsp cooking oil. When hot, stir-fry the onion 1 minute until translucent and fragrant.
- Spread out the beef and stir-fry over high heat 1–2 minutes until the color changes and about 80% cooked. Transfer out immediately (do not overcook).
- In the same pan, pour in the oyster sauce mixture. Once boiling, return the beef and stir-fry over high heat 30 seconds until the sauce coats evenly and the beef is fully cooked.
- Taste and adjust; pour the oyster sauce beef and sauce over the rice and serve.
