- Dice onion and tomato. Beat the egg with a pinch of salt and 1 tsp water until slightly frothy; fluff the rice.
- Scramble the egg until half-set and set aside. In the same pan with fresh oil, sauté onion and tomato over medium-low until fragrant.
- Add rice and toss; return the egg, then season with salt and soy sauce.
