  1. Cut potatoes 2 into sticks; soak in cold water 10 minutes, drain, and pat dry. Cut cod fillet 1 into chunks, pat dry, and season with a pinch of salt and black pepper. Freeze mozzarella sticks 6 for 10 minutes if possible so they hold shape.
  2. Divide 5 tbsp flour into two portions; spread one on a shallow plate and mix the other with beaten egg 1 into a batter.
  3. Pour olive oil into a deep pot to about 3 cm depth; heat over medium to 170°C (small bubbles around a chopstick tip).
  4. Fry potato sticks 4 minutes until golden; drain. At the same temperature, fry cod chunks 2–3 minutes per side until the coating is crisp and the fish is opaque; drain.
  5. Raise oil to 180°C; lightly coat cheese sticks in flour and egg; fry about 1 minute until golden and cheese just melts inside (longer risks bursting).
  6. Arrange fries, fish, and cheese sticks on a platter; serve hot with ketchup or mustard.
