- Separate whites from yolks; lightly beat whites with a pinch of salt. Dice the cucumber small.
- Heat oil in a skillet over low; pour in whites and push into soft curds with a spatula.
- Add cucumber; stir-fry 1 minute.
- Season with white pepper; serve.
- Pair with a main from the custom additions if you like; yolks can be used separately.
- Use medium heat unless noted; stir or flip occasionally for even cooking.
- Check doneness (no pink juices in poultry, fish flakes easily), then adjust salt.
