- Slice 120 g pork against the grain into thin pieces; shred 1/4 onion; seed and cut 1/2 green bell pepper into strips; slice 2 garlic cloves.
- Toss pork with 1/2 tbsp soy sauce and 1/2 tbsp rice wine; let rest 5 minutes to marinate (reserve the remaining half of each for stir-frying).
- Heat a skillet over medium-high. Add 1 tbsp olive oil. When hot, stir-fry garlic slices and onion about 1 minute until translucent.
- Add pork over high heat; stir-fry about 2 minutes until color changes and surfaces are lightly browned (do not overcook or meat will toughen).
- Add pepper strips over medium heat; toss about 1 minute until still crisp and brightly colored.
- Drizzle the remaining soy sauce and rice wine down the side of the pan; toss quickly about 30 seconds, taste with a pinch of salt, and serve.
