  1. Julienne 1/2 onion into thin strips; cut 180 g cabbage into wide shreds; slice 120 g mushrooms; mince 1 garlic clove.
  2. Heat a skillet over medium. Add 1 tbsp olive oil. When hot, sauté minced garlic about 30 seconds until fragrant.
  3. Add onion; stir-fry about 2 minutes until slightly translucent and sweet.
  4. Add mushrooms over medium heat; stir-fry about 2 minutes until slightly soft with lightly browned edges.
  5. Add cabbage over high heat; stir-fry about 2 minutes until just wilted but still crisp (stems turn slightly translucent).
  6. Drizzle 1 tsp soy sauce down the side of the pan; toss quickly, taste with a pinch of salt, and serve.

FAQ

Skip soy sauce?

Salt and pepper only works.

Bento-safe?

Yes—cool before packing.

What should I do if the vegetables release water?

Drain them well and cook in batches so the pan stays hot instead of turning the vegetables soft and watery.
