  1. Bring beef to room temperature; pat dry; salt and pepper both sides. Blanch broccoli 1 minute; drain.
  2. Heavy skillet over high heat until lightly smoking; add oil; sear steak 2–3 minutes until deep brown on the first side.
  3. Flip; medium-high; add butter and spoon over the meat 2 minutes more.
  4. Rest steak 4 minutes; fry egg in pan drippings to set whites, runny yolk.
  5. Slice steak against the grain; plate with egg and broccoli; more pepper if needed.
