  1. Prep: Salmon 150g, Broccoli 100g, Onion 1/4; pat Salmon dry and rub with Olive oil 2Tbsp, Lemon juice 1Tbsp, Salt pinch, Black pepper pinch, Garlic 1clove.

  3. Preheat oven to 200°C. Pat salmon dry; cut broccoli and onion into chunks.
  4. Toss vegetables on a lined tray with 1 Tbsp oil, salt, and pepper; roast 8 minutes.
  5. Brush salmon with remaining oil; salt, pepper, and minced garlic; place on vegetables; drizzle lemon juice.
  6. Roast 8–10 minutes until edges color and fish flakes but center stays moist.
