  1. Pat 150 g salmon dry on both sides; cut 100 g broccoli into small florets; cut 1/4 onion into chunks; mince 1 garlic clove.
  2. In a small bowl, mix 2 Tbsp olive oil, 1 Tbsp lemon juice, a pinch of salt, a pinch of pepper, and minced garlic; divide into two portions.
  3. Preheat oven to 200°C; line a baking sheet; toss vegetables with half the seasoned oil, spread flat, and roast 8 minutes.
  4. Brush salmon on both sides with the remaining oil; place on roasted vegetables and drizzle a little more lemon juice.
  5. Roast 8–10 minutes more until edges color and fish flakes easily but the center stays moist—overcooking dries it out.
  6. Rest 2 minutes so juices settle, then plate.
  7. Squeeze a little more lemon over the top before serving if you like.
