- Boil noodles to about 80% done; drain and reserve 3 Tbsp cooking water; mince garlic.
- Melt butter over low heat; cook garlic until golden.
- Add noodles and reserved water; toss on medium-high about 1 minute.
- Push noodles aside and fry the egg sunny-side or soft in the same pan if you like.
- Season with salt and pepper; add a small knob of butter off heat.
- Use medium heat unless noted; stir or flip occasionally for even cooking.
- Check doneness (no pink juices in poultry, fish flakes easily), then adjust salt.
