High heat and short time keep cabbage crisp and beef from drying out.

Steps

How to make it

Prep 8 min · Cook 10 min

  1. Cut 120 g beef into small cubes against the grain; slice 200 g cabbage; mince 3 garlic cloves. Mix 1 tbsp soy sauce with a pinch of salt and set aside.
  2. Heat 1 tbsp olive oil in a skillet over medium; stir-fry garlic about 20 seconds until fragrant.
  3. Add beef over high heat; stir-fry 1–2 minutes until color changes and no red remains in the center; set aside.
  4. In the same pan, add cabbage over high heat; stir-fry about 2 minutes until leaves soften slightly and edges turn translucent.
  5. Return beef; drizzle in the soy sauce and salt mixture; toss over high heat about 1 minute until evenly seasoned.
  6. When beef is cooked through and cabbage still has some crunch, serve.

Tips & storage

Make it easier

  • Do not overcook cabbage—some crunch is the point.
  • Rest meat for 2–3 minutes before slicing; when pieces vary in thickness, check the thickest center for doneness.

Eat within 1 day refrigerated; reheat briefly.
