- Mince the garlic; dice the tomato. Cut the tofu into bite-size cubes. Beat the eggs with a pinch of salt and 1 tsp water until lightly frothy.
- Heat a little oil in a skillet; pan-fry the tofu until lightly golden on both sides. Set aside.
- In the same pan, sauté garlic and tomato until soft. Return the tofu, pour in the eggs, and stir until half-set; season with salt and soy sauce.
