  1. Mince the garlic; dice the tomato. Cut the tofu into bite-size cubes. Beat the eggs with a pinch of salt and 1 tsp water until lightly frothy.
  2. Heat a little oil in a skillet; pan-fry the tofu until lightly golden on both sides. Set aside.
  3. In the same pan, sauté garlic and tomato until soft. Return the tofu, pour in the eggs, and stir until half-set; season with salt and soy sauce.
