- Peel the onion and slice into thin, even strips along the grain. Beat the eggs with a pinch of salt and 1 tsp water until lightly frothy. Portion rice into a bowl.
- In a skillet, cook the onion until tender. Add soy sauce, sugar, and a splash of water; simmer about 1 minute.
- Pour in the eggs and, when half set, slide the mixture over the rice.
