How to make it

  1. Chop the scallions. Beat the eggs with a pinch of salt and 1 tsp water until lightly frothy. Reheat the rice.
  2. Heat oil in a skillet, pour in the eggs, and cook until just set; add most of the scallions.
  3. Spoon the scallion eggs over the rice, drizzle soy sauce and sesame oil, and mix.

  • Add scallions in two batches—half in the pan, half on top—for more layers of flavor.
