- Chop the scallions. Beat the eggs with a pinch of salt and 1 tsp water until lightly frothy. Reheat the rice.
- Heat oil in a skillet, pour in the eggs, and cook until just set; add most of the scallions.
- Spoon the scallion eggs over the rice, drizzle soy sauce and sesame oil, and mix.
