Brown mushrooms first, then chicken and pesto pasta for more depth than plain green sauce noodles. Scallion-garlic pesto, not basil pesto.

  1. Boil salted water; cook pasta until al dente, drain and reserve ½ cup pasta water.
  2. Prep: Spaghetti 80g, Chicken breast 100g, Mushrooms 80g, Scallions 2stalks, Garlic 2cloves.
  3. Slice chicken and mushrooms. Cook pasta al dente; reserve ½ cup water. Blend scallion greens, garlic, 2 Tbsp oil, and cheese into pesto paste.
  4. Heat oil; cook mushrooms and chicken through.
  5. Add pasta, pesto, and a splash of pasta water; season with salt and pepper.

Tips & storage

Make it easier

  • Cook mushrooms until they release water and dry again for stronger aroma.

Best fresh; mushrooms soften after refrigeration.
