- Boil salted water; cook pasta until al dente, drain and reserve ½ cup pasta water.
- Prep: Spaghetti 80g, Chicken breast 100g, Mushrooms 80g, Scallions 2stalks, Garlic 2cloves.
- Slice chicken and mushrooms. Cook pasta al dente; reserve ½ cup water. Blend scallion greens, garlic, 2 Tbsp oil, and cheese into pesto paste.
- Heat oil; cook mushrooms and chicken through.
- Add pasta, pesto, and a splash of pasta water; season with salt and pepper.
