- Cut salmon into chunks and pat dry. Cook pasta until al dente; reserve ½ cup pasta water.
- Blend scallion greens (green parts only), minced garlic, 2 tbsp olive oil, and grated cheese into a pesto paste.
- Pan-fry salmon in remaining oil until golden both sides. Add pasta, pesto, and a little pasta water; toss. Finish with lemon juice and black pepper.
