Sear salmon until lightly charred, then gently toss with pesto pasta at the end to keep fillets intact. This pesto uses scallion greens and garlic (not classic basil pesto).

How to make it

  1. Cut salmon into chunks and pat dry. Cook pasta until al dente; reserve ½ cup pasta water.
  2. Blend scallion greens (green parts only), minced garlic, 2 tbsp olive oil, and grated cheese into a pesto paste.
  3. Pan-fry salmon in remaining oil until golden both sides. Add pasta, pesto, and a little pasta water; toss. Finish with lemon juice and black pepper.
