Do not overcook shrimp—curl and color change is enough. This pesto uses scallion greens and garlic (not classic basil pesto).

  1. Rinse and pat shrimp dry; boil pasta until al dente; reserve 1/2 cup pasta water.
  2. Blend scallion greens (green parts only), garlic, 2 tbsp olive oil, and cheese into a pesto paste.
  3. Remaining oil in skillet; cook shrimp until opaque; set aside. Same pan—pasta, pesto, and pasta water; toss; return shrimp and fold gently.
