  1. Wash lettuce or other greens and spin or pat completely dry; cut tomato, cucumber, and carrot to bite size.
  2. In a small bowl, whisk olive oil, lemon juice, salt, and pepper into a vinaigrette.
  3. Add all vegetables to a large bowl, drizzle dressing, and toss gently.
  4. Add nuts, cheese cubes, or a boiled egg if you want more staying power.
