Solo Sesame Cold Noodles

Thin sesame paste with warm water first so it does not clump; an ice bath is what makes cold noodles right.

Steps

How to make it

Prep 8 min · Cook 5 min

  1. Thin sesame paste with 2 tbsp warm water; stir in soy sauce, vinegar, sugar, and minced garlic.
  2. Julienne cucumber; soak in ice water to stay crisp.
  3. Boil noodles in a pot per package time; drain and rinse in ice water.
  4. Toss noodles with sauce well; if thick, add 1 tbsp noodle cooking water.
  5. Plate and top with cucumber; white sesame optional.

Tips & storage

Make it easier

  • Swap part of the sesame paste for peanut butter for a richer flavor.

Eat right after tossing; sauce and noodles separate up to 1 day refrigerated.
