  1. Slice beef 150 g thin against the grain (about 0.3 cm) and pat dry; mince 4 garlic cloves. Mix 1.5 tbsp soy sauce, 1 tsp sugar, a pinch of black pepper, and minced garlic into a sauce.
  2. Toss beef slices with half the sauce; rest 5 minutes to marinate.
  3. Heat 1.5 tbsp olive oil in a skillet over medium-high; lay beef in a single layer and rest 30 seconds until the surface colors.
  4. Stir-fry quickly 1 minute until about 70–80% done (center still slightly pink); remove to a plate.
  5. In the same pan, pour in the remaining sauce and simmer over low heat 30 seconds until lightly thickened and bubbling.
  6. Return beef and toss over high heat 30 seconds to coat; serve when fully cooked but still tender.
